Hi Erika Paola! We’re thrilled to have you here. Could you share with us a bit about your background and how you became a mixologist extraordinaire?

Hello, I am a Land Surveyor/Civil Engineer that works for renewable energy all over the states. I’ve always loved a good cocktail and one day I decided to try making one at home, then another one, then I started getting creative and then I couldn’t stop. The world of cocktails/mixology is sooo sooo big and sooooo interesting. There is always something new to learn. Specially about the story and reason behind every cocktail. It was easy to fall in love with it even when I’ve never been a bartender or worked in service.

Texas is such a diverse and exciting state. What was it about Texas that drew you in, and how has it influenced your craft?

I ended up moving to Texas because of work, specifically to Houston, 2 years later I landed my dream job in Austin. The thing about Texas is that you can have a bit of everything, there is a lot of different cultures, with different cultures comes a lot of different types of foods to try, and my favorite: there is a lot of nature. Coming from Puerto Rico, I really enjoy that here in Austin you have a good hybrid between City and Nature.

Austin has definitely influenced my craft a lot. Here I got to know the world of speakeasies and really good craft cocktail bars. I’ve made tons of friends in the industry that have helped not only in my journey but with my project of Lunes de Sed.

Texas is known for its incredible cuisine. What’s your go-to restaurant for a delicious meal, and what dish would you recommend?

One of my favorite restaurants to go is 1618 Asian Fusion, their food is delicious, I really recommend the Xiao Long Bao (Pork Soup Dumplings) and their Fillet mignon stir fry onion.

If you are more adventurous with food, highly recommend Intero.

Nut Today Mocktail Recipe by Erika Paola from Lunes de Sed

And now, the moment we’ve been waiting for – your Mother’s Day Mocktail! Can you walk us through the recipe and what inspired this delicious creation?

This mocktail is called “Nut Today” because you know…. no alcohol today! And it is Mother’s Day, so I wanted something light and tropical that makes you feel like you are at an outdoor brunch having fun with your mom. There is some influence in this mocktail from one of my favorite bars in Houston, Refuge. This bar has a section in their menu that is dedicated to mocktails, and they were delicious and complex… not just juices mixed together!

To add some complexity in flavors for this mocktail I started by creating a Pistachio Orgeat.

An Orgeat is an almond and orange blossom water syrup. For the pistachio orgeat I first pealed the pistachios, blended them with water and then strained them to create the pistachio milk.

Then I mixed this with sugar, added drops of orange blossom water, and rose water. This is a semi-rich syrup which means that is 1.5 parts sugar to 1 part water, and it makes for a thicker syrup that adds texture to the drink. And here is the recipe:

Pistachio Orgeat Syrup

60g Pistachios
100g Water
(This yields about 1.5 cups of pistachio milk)
2 Cups of Sugar
4 Drops Orange Blossom Water
2 Drops of Rose Water

Nut Today – Mocktail Recipe by Lunes de Sed

3/4 oz. Pistachio Orgeat
3/4 oz. Pineapple Juice
1/2 oz. Lemon Juice
1/2 oz. Coconut Water
4-6 mint leaves in the shaker.

Double strain on a rocks glass over crushed ice with a lemon wheel and mint bouquet. Also top with some grated nutmeg to elevate the experience.
